Job Summary:
Responsible to Food Production Supervisor for the preparation of all foods served from the master menu and all special orders to fulfill the needs of the therapeutic diets for all residents, staff and the Meals on Wheels Program to a total of 400-450 meals three times a day. The Cook ensures that this preparation follows established standards of safety and sanitation.
Statement of Qualifications:
Completion of Grade 12 or equivalent plus a Cook II certificate.
Three years' in an institutional kitchen setting or related organization.
The successful candidate will be required to complete a Police Record Check to the City of Ottawa's satisfaction.
Knowledge of:
Preparation of bulk food;
Canada Food Guide;
Preparation and cooking of vegetables, meat, fish and poultry, soups and sauces;
Elementary butchery;
Elementary dessert preparation;
Health Protection and Promotion Act-Food Premises;
General Knowledge of buffet preparation;
Preparatory methods of entrees;
The “Sanitation Code” for Canada’s Food Industry;
Working knowledge of applicable occupational health and safety legislation;
General knowledge of corporate/departmental policies and procedures related to health and safety.
Competencies and Skills:
Food preparation techniques and quantity cooking;
Sanitary and safe use and maintenance of all production and preparation equipment;
Leadership and organization skills for enhancing co-operative and timely production;
Health & Safety and Sanitation standards and their application in the work place;
Body mechanics and safe work practices.
Language:
Oral fluency, reading and writing ability in English.
